Cañada del Trigo, a canyon in the northwest corner of the valley.

Alcohol 13.9%
Service temperature 16 – 18 ºC. / 61 – 64 ºF.
Vinification
Manual grape harvest and selection. Each variety is vinified separately, with alcoholic fermentation in stainless steel tanks at controlled temperatures of between 28º y 30°C. (82 and 86 ºF.), and a 45-day-long maceration period during which malolactic fermentation takes place. After ageing for 18 months in new French oak barrels, the assemblage of the three varietals was made and the wine was bottled. It then passed to our ageing cellar for final evolution in bottle.
Winemaker comments
A wine with a very intense and deep ruby-red color. Complex on the nose, with floral and ripe red fruit aromas, such as cassis, as well as coffee, tobacco, chocolate, bouquet garni, spices and cedar. In mouth it has excellent balance, vigorous body and magnificent floral, fruit and tannic persistence.
We recommend decanting at least 15 minutes before serving.
Pairing
Red meats, especially slow-cooked beef ribs, game, cured cheeses, complex dishes, full-bodied highly seasoned sauces.

Winemaker’s Comments
Dark garnet color, with ruby rims. Intense, complex nose, with aromas of green pepper, spices, licorice, eucalyptus, lavender, roasted nuts, red fruits, vanilla, black pepper, chocolate. In the mouth it has a velvety and wide entry that evolves with marked tannins, alcohol present and fresh acidity with good balance, leaving a very long and marked finish with notes of red fruits, spices, toasts, eucalyptus and currant.

Beef and veal, stews and chocolate-based desserts, grilled vegetables, chicken with moles, preferably poblano.

Wine of deep, bright and clean garnet red color. Intense aromas of red fruits, spices, cocoa, chocolate, tobacco, plum jam, strawberry and hibiscus. Velvety on the palate, well balanced, with fine tannins and flavors that confirm the aromas with a long finish.

Grilled meat cuts, roasted vegetables, stews, moles, mature cheeses, Bolognese pasta.

On the palate the entry is smooth, with a very round evolution, smooth and balanced between acidity, alcohol and tannins. The finish is long with flavors of cocoa, plum and wild berries.

Winemaker’s Comments
A bright, clean, purplish-red wine. Very present aromatic varietal intensity with notes of black fruits such as plums and blackberries, hibiscus flowers and sweet tamarind notes; the wood interacts with these aromas providing vanilla and tobacco. In the mouth it is very lively and fresh, its tannins accompany it throughout the mouth, providing astringency that is complemented by the slight sensation of final sweetness.

Red meats (cuts), game, rack of lamb, aged cheeses, blue fish such as salmon, sauces based on ripened red fruits, Mexican dishes.

Vinification
Early morning manual harvest and bunch selection.
Fermentation took place in new and second-use French oak barrels at a controlled temperature of 18 ° C. After inducing malolactic fermentation, the wine rested on its lees for 3 months; the wine was separated from the lees to rest for three more months in the barrels. After bottling, it rested in our cellar for eight months before its release.
Winemaker’s Comments
Pale yellow color wine with straw edges, very bright and clean in appearance. Very present and intense varietal aromas, of pineapple, banana and spices, coconut and vanilla. In the mouth it is very lively and fresh with an excellent alcohol / acidity ratio and flavors of coconut, vanilla and tropical fruits that last for a long time.
Pairing
Dishes based on seafood and fresh and smoked fish, creamy sauces, white meats in general, risotto with saffron.

The Guadalupe Valley, whose climate of continental influence allows the slow ripening of the grapes. The clay and Sandy soils are optimal for growing vines. The warm days and cool nights of summer give good aromatic intensity and the marked acidity that characterize the terroir of this wine.

Vinification
Early morning manual harvest and bunch selection. Pressing and prolonged maceration, followed by fermentation in stainless steel tanks at controlled temperatures between 13º and 15º C. The yeasts are paralyzed by cold to leave a small concentration of residual sugar.
Winemaker’s Comments
A very intense and deep ruby red wine; Complex nose, with floral and red fruit aromas. Bright pomegranate colored wine. Intense aromas of fresh fruits such as strawberry, peach, apricot, and sweet flowers such as rose. Soft palate, with fresh and pleasant acidity, and flavors of wild strawberries, peaches and apricots, very faint alcohol and dry finish.

Seafood, fatty and white fish, fresh cheeses, paella, pasta made with white sauce, slightly spicy dishes, especially chiles en nogada.

Palate with a smooth and wide entry, in the evolution a good balance of tannins, acidity and alcohol, leaving a long flavor of ripe fruits, spices and chocolate.

Winemaker’s Comments
Bright and clean yellow wine with greenish edges. Very intense varietal aromas of white flowers, tropical fruits, peach, linden, guava, lychee. On the palate it has a smooth entry, with flavors of peach, apricot and pineapple, and a very fresh palate with a long-lasting finish.

Non fatty fish, raw or steam cooked seafood, fresh cheeses, salads, chiles en nogada, desserts with fruits, ceviches.

Sus varietales son añejados por separado en barrica nueva francesa de 225 lts., vino de color rojo rubí muy intenso y profundo con aromas florales a frutas rojas maduras, casis, café, tabaco, chocolate, especias y madera fina. Con un equilibrio señorial de cuerpo vigoroso, una magnifica persistencia floral frutal y tánica. Un final con elegantes taninos aterciopelados y finos que nos recuerdan los grandes vinos de Burdeos que como este se embotellan sin filtrar.
